Deliciously Nutritious: Easy Veggie Quesadillas for Happy, Healthy Kids!

 As parents, we all know how challenging it can be to convince our little ones to eat their veggies. But worry not! We've got the perfect solution that will leave both kids and parents smiling: Easy Veggie Quesadillas! Packed with wholesome ingredients and bursting with flavors, this recipe is a surefire way to ensure your kids get the nutrition they need in a delightful package. Recipe: Ingredients: Whole wheat tortillas (6-inch size) 1 cup grated cheddar cheese (or any favorite cheese) 1 cup colorful bell peppers, thinly sliced 1 cup zucchini, grated 1 cup baby spinach leaves 1 tablespoon olive oil 1 teaspoon cumin powder Salt and pepper to taste Instructions: Heat olive oil in a skillet over medium heat. Add the sliced bell peppers and grated zucchini. Sauté for 3-4 minutes until they become slightly tender. Season with cumin powder, salt, and pepper. Lay out a tortilla on a flat surface. Breakfast Crunchwraps- Homemade!

If you have tried the Taco Bell Crunchwraps in the morning, you already know what inspired this. If you haven't. go to Taco Bell first, then try these. They aren't Taco Bell, but they are pretty good. These are semi-homemade. I used simply potatoes hash browns. For those of you who have time to make them fresh, I'm sure they would be even better. Ingredients. 1 sausage patty/or 2 slices of bacon 1 egg - scrambled 1 serving of simply potatoes hash browns (or make your own) cheddar cheese queso+salsa dip Brown the sausage and potatoes first (they take the longest) make your scrambled egg Get a tortilla (I use the burrito size ones for mine) Then assemble. I put the hash browns first, then sauce so the sausage stays, then sausage, egg and top with shredded cheese.  Fold and brown each side ENJOY!!  Do you like this recipe? Share it!
